History
Animal Products Processing Division, Livestock Research Institute was founded in 1958 without the formal staff. Until 1966, Mr. Ho Ching-Min was assigned as first leader. Mr. Ho was responsible for all research business until the expert of carcasses rating Mr. Chen Yi-Hsiung joined. So far, the frame of animal products processing division was established.

Career
I started my research of meat science at TLRI after graduating from National Chung-Hsing University with a master degree of animal science in 1993. I developed skills in Chinese-style traditional meat processing, meat microbiology, meat chemistry and animal carcass evaluation for more than 20 years. Now, my researches are focus on developing processed meat products includes pork and poultry meat could store at room temperature for long period.
