The establishment of commercial model on the reutilization of Pidan making pickle solution
The objective of this study was to investigate the changes of main components of pickle solution during pickling period and effects of adjusted pickle solution on Pidan making yield. Results showed the pH value, NaOH and NaCl concentrations in pickle solution were gradually decreased during 14 days pickle period. The used solution was adjusted equal to the original solution level by adding NaOH and NaCl for reutilization. The yield of original pickle solution (OPS), the first and second adjustment of used pickle solution (UPS) on Pidan making were over 90%. The MUOPS (1/1), which was the mixture of UPS and OPS (UPS/OPS = 1/1), was the best for the commercial model of UPS reutilization (the yield of Pidan making was up to 94.1%).
